Originally from Poland, Mario’s career in the UK began over 8 years ago. Importantly he has spent all of this time here in the Cotswolds. Locally renowned 5 star hotel Calcott Manor was his first taste of dishes we like in this area, followed by the well regarded Rectory Hotel and Swan at Southrop, before joining The Ormond in January 2012.

Mario runs a busy kitchen serving robust, seasonal British food with some classic French inspired dishes using local sourced produce, game and meat from the many farms around Tetbury. He can often be seen at Stroud or Cirencester farmer’s markets buying from local suppliers like Madgett’s Farm, suppliers of our excellent duck and chicken, and generally keeping in touch with new local food producers.
